#120/#240: The Shaping Stone easily reforms the cutting angle, and leaves a toothy finish to the edge. Messermeister designed this stone as an economical solution for traditional sharpening and maintenance of fine knives. This 120 & 240 grit stone is extra coarse for restoring the damaged knife edges by removing enough material to raise the edge above the flaw.

#400/#1000: The Restoration Stone is for occasional use to bring back the original cutting angle. It leaves a medium finish to the edge. Messermeister designed this two-sided combination water stone to be an economical solution for infrequent sharpening. The 400 grit side will correct slight edge flaws and the 1000 grit side is excellent for both finishing and maintenance. 

#1000/#3000: The Maintenance Stone is for regular use to keep your edges sharp factory sharp, and leaves a fine finish to the edge. Messermeister designed this stone for those who are interested in keeping a razor-like edge on their kitchen cutlery. The 1000 grit side is excellent for maintaining a very sharp edge. The 3000 grit side is great for finishing the sharpest edges with a polish.

#2000/#5000: The Polishing Stone is for frequent use to create an extra-fine finish on extreme edges, leaves a mirror polish on the edge. Messermeister designed this stone for those who are interested in keeping a razor-like edge on their kitchen cutlery. The 2000 grit side is excellent for maintaining a very sharp edge. The 5000 grit side is great for finishing the sharpest edges with a polish.
