A nutritious, protein-heavy breakfast is essential for maintaining your energy levels and empowering yourself to make better food decisions throughout the day.
That said, I’ve found breakfast to be one of the most challenging meals to eat consistently, and I know I’m not alone. In a study on breakfast consumption, only 35% of respondents said that they ate breakfast daily. There are lots of reasons people skip breakfast, from appetite to weight loss goals. Personally, I’ve found that my main barrier is time. Making something nutritious and tasty is often time-consuming and hard to fit into a busy morning routine. That’s why I’ve accumulated some simple, quick, and easy breakfast ideas that can be made ahead to make your weekday mornings easier.
French Toast & Sausage Roll-Ups
If you’re a fan of sweet and savory dishes, this one’s for you. With the sweetness of french toast balanced by savory sausage, this is the best of both worlds.
Use your basting brush to brush more of your french toast mixture over the top of your sausage roll-ups.
Bake according to croissant package instructions.

Overnight Oats
A breakfast classic with lots of room for variation, overnight oats are perfect for a busy schedule. A little prep the night before will give you a grab-and-go breakfast in the morning, packed with nutrients to set you up for a great day.

Prep your ingredients
Add all of your ingredients to a container and mix until combined.
Marinate overnight
Cover your container with a lid or plastic wrap and place in the fridge overnight.
Top and enjoy
In the morning, add your toppings and enjoy your nutritious breakfast.
Breakfast Taquitos
This savory breakfast option is packed with protein, simple to make, and can be made ahead and stored in the freezer or fridge. Simply reheat in the microwave to enjoy this delicious breakfast whenever you choose.
Once your eggs are scrambled, mix in your cooked breakfast sausage and ½ cup grated cheddar cheese.
Assemble your taquitos
Lay your tortillas out on a cutting board and add your tater tots, bacon, scrambled eggs, sausage, bacon and the remaining grated cheddar cheese to each tortilla.
Roll your ingredients up in your tortillas so that you have 6 equal-sized taquitos.
Bake your taquitos
Add your prepared taquitos to a baking dish and bake in the oven at 350°F (176°C) for 10 minutes, until the tops are slightly browned.
Serve or store
Either serve your taquitos immediately or store in an air-tight container and reheat in the oven or microwave as needed.
