    With the autumn season upon us, fall soup recipes aren’t the only thing at the top of everyone’s minds. Fall is all about warm and hearty foods, and Shepherd’s Pie fits the bill perfectly. What was once a way for 18th Century Irish peasants to repurpose leftovers into an affordable and hearty dish, Shepherd’s Pie now has deep roots in Irish and British culture and has garnered international love. Not to be confused with traditional cottage pie, Shepherd’s pie is a dish consisting mainly of potatoes, vegetables, and lamb, and it’s the perfect easy and affordable fall recipe.

    IngredientsInstructions
    • 1 pound ground lamb
    • 1 tablespoon olive oil
    • 1 yellow onion, chopped
    • 1 rib of celery, rinsed and chopped into 1” pieces
    • 1 carrot, peeled and chopped into 1” pieces
    • 2 cloves of garlic, minced
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon Italian seasoning
    • Salt & pepper, to taste
    • 1 cup beef broth
    • 1 tablespoon all-purpose flour
    • 6 medium russet potatoes, washed, peeled, and cubed
    • 4 oz salted butter
    • ½ cup whole milk
    1. Make your filling
      • In a large skillet on medium heat, add your olive oil and brown your ground lamb. 
      • Use a slotted spoon to remove your browned meat to a separate bowl.
      • Drain the excess fat and add your chopped onion, carrot, celery, and garlic to your skillet, sautéeing for 5 minutes until softened.
      • Add your ground meat back to the pan and stir to combine.
      • Stir in your Worcestershire sauce, Italian seasonings, and salt & pepper.
      • Sprinkle your flour over your mixture and cook, stirring frequently, for 1 minute.
      • Gradually mix in your beef broth, allowing your mixture to cook until it has thickened. 
    2. Make your mashed potatoes
      • Add your cubed potatoes to a stock pot and fill it with water to about 1” above your potatoes. 
      • Bring your water to a boil and add a generous amount of salt.
      • Boil your potatoes for 10 minutes, or until they are tender and able to be pierced by a dull knife.
      • Use a strainer to strain your potatoes.
      • Add your potatoes back to your empty stock pot on medium heat, and give them a gentle shake for 30 seconds to cook off excess moisture. 
      • Mash your potatoes to your desired consistency.
      • Fold in your butter, milk, and salt.
    3. Assemble your Shepherd’s pie
      • Preheat your oven to 375°F
      • Add your filling to a baking dish.
      • Top with an even layer of your mashed potatoes. 
      • Bake in your preheated oven for 30-35 minutes, until your potatoes are golden brown.
