    Between baking cookies, last-minute wrapping, and prepping for Santa’s arrival, Christmas Eve can be a lot. Take control of an otherwise-hectic night with this simple, nutritious, and delicious dinner idea. Chicken pot pie is a classic, hearty winter dish that will keep the kids happy this Christmas Eve. 

    Cast Iron Chicken Pot Pie Recipe

    This year, ditch the pie dish and make your chicken pot pie in a cast iron skillet. This will ensure a crisp crust and easy clean up. Make this recipe extra simple with a store-bought pie crust, or follow our recipe to make your own if you have the extra time.

    IngredientsInstructions
    • 1 tablespoon olive oil
    • 2-3 boneless, skinless chicken breasts, cubed into 1” pieces
    • 1 medium yellow onion, finely chopped
    • 2 medium carrots, peeled and grated
    • 8 oz brown mushrooms, stems removed and finely chopped
    • 2 cloves garlic, minced
    • 2 cups chicken stock
    • ⅓ cup all-purpose flour
    • ½ cup heavy cream
    • 1 cup frozen peas
    • Salt & pepper, to taste
    • 1 egg, beaten
    • Store-bought pie crust, partially thawed (or homemade pie crust)
    1. Preheat your oven and skillet
      • Preheat your oven to 425°F (218°C).
      • Place a 10-inch cast iron over medium heat, allowing it to warm.
    2. Cook your chicken
      • Add your olive oil to your skillet and turn the heat up to medium-high.
      • Once your oil is shimmering, add your chicken and season with salt & pepper to taste.
      • Cook, stirring occasionally, for 5-6 minutes, until your chicken is cooked through.

    3. Sauté your vegetables
      • Turn your heat down to medium and add your onion and carrots, sautéing for 8 minutes.
      • Add your mushrooms and garlic, sautéing for another 5 minutes.
    4. Make your sauce
      • Sprinkle in your flour and cook for 1 minute, stirring constantly.
      • Gradually whisk in your chicken stock and heavy cream until smooth, then bring to a simmer.
      • Simmer gently until thickened, about 3-5 minutes.
      • Season with salt & pepper to taste.
    5. Cool your filling
      • Add your cooked chicken and frozen peas back into the skillet and stir to combine.
      • Remove from the heat and allow to cool slightly.
    6. Assemble your chicken pot pie
      • While your filling cools, roll out your pie crust into a 10” circle.
      • Place your pie crust over the top of your cooled filling, folding the excess crust over the side of your cast iron and sealing the edges.
      • Use a sharp knife to cut 5 small slits in the top of your crust to allow steam to escape.
    7. Brush with egg wash
      • Brush the top of your pie with the beaten egg.
      • Sprinkle with coarse salt.
    8. Bake your chicken pot pie
      • Bake in your preheated oven for 30-35 minutes, until the crust is golden brown.
    9. Rest and serve
      • Rest your pie for 15 minutes.
      • Slice and serve immediately after resting.
